SWEET MAPLE AND CINNAMON PANCAKES WITH SWEETCURE BACON FOR SUNDAY BREAKFAST

FOR CLIVE CAN'T BELEIVE YOU ATE ALL THIS...
CARAMALIZED MAPLE & CINNAMON PANCAKES TOSSED IN BUTTER AND TOPPED WITH LOTS OF CRISPY SWEETCURE BACON AND MORE MAPLE SAUCE, SIDE OF SOFT SCRAMBLED EGGS

MY SERVING AND ONLY MANAGED 1/2 OF THIS...

1 cup of self raising flour
1 cup of butter milk
2 medium eggs
pinch salt
2 tbsp maple syrup
pinch cinnamon
butter for cooking
more maple for drizzling
sweetcure bacon
4 eggs for scramble
dash milk and butter for scramble
salt and pepper

Heat a small non stick frying pan to med hot temp.  To make the batter, add the buttermilk, eggs, flour, salt, cinnamon, and maple together and whisk to a batter.  In a frying pan cook the bacon, whilst adding a knob of butter to the pre heated pan and a ladle of batter mix cook till you see bubbles coming through the mix and then flip, as a general rule it is ok to fluff the first pancake, this will tell you if your pan is too hot or cold, adjust if neccessary, repeat process till all batter mix is used, keeping pancakes warm in oven. 

Scramble the eggs whilst the last pancake is cooking.

To caramalize the pancakes, I only do a couple in the stack, pour couple of tablespoons in the pan and add the pancake and flip after a few minutes, this does make all the difference. 

Serve stacked with the bacon piled high on top and scrambled eggs on the side...
