SEAFOOD PAELLA WITH FRESH CLAMS, PRAWNS AND OCTOPUS

 
SEAFOOD PAELLA
A gorgeous dinner that delivers much more to the plate than the effort required to make, this is a 20 minute cook, but allow half an hour.  This paella is a rich satisfying dinner with the touch of luxury with the seafood.  (You can swap out the seafood for chicken)
 
INGREDIENTS
(serves 6-8)
1 large glug of oil
 1 large onion fine diced
4 cloves of garlic fine chopped
1 pint of paella rice
2-3 pints of chicken or fish stock
1 tsp saffron threads or paella colourant and seasoning
500g fresh clams
50 fresh raw prawns
500g octopus legs cooked
1 red & green peppers 1" squared
small bunch fresh parsley
salt and pepper
 
 Heat the oil in a paella pan or non stick deep saucepan, soften the onion and garlic for 5 minutes not allowing them to colour then add the rice and stir for a few minutes, add the saffron and then start to add the stock, a few ladles at a time until almost absorbed, keep gently stirring, repeat this until the rice is cooked and has absorbed all the stock, (normally 2 to 2.5pints)  then add all the seafood and peppers and gently stir in until cooked through approx 5 minutes, (if using chicken pan fry 3/4 cooked and then add at this point), taste and season then sprinkle over the parsley and serve with fresh warm crusty bread and salad.
