Whats not to love with this parcel of gorgeous bacon wrapped mini meatloaf, great as a lunch or dinner and perfect for paelo food on the go. This is a winner dinner in my family, easy to pop in lunch boxes and eat on the go or as larger loaf for a full blue plate special with mashed potatoes for the non paleo in my family, vegetables and gravy. This is one of my husbands favourites, he loves a mix of meats, so this meatloaf is made with rose veal mince, angus steak mince and pork mince along with seasonings.
5 minutes preparation 10-15 minutes oven cook
INGREDIENTS
(serves 4)
500g steak mince
300g veal mince
500g pork mince
4 rashers of pancetta chopped
12 rashers of bacon
1 glug of coconut oil
1 onion fine chopped
1 clove garlic chopped
1 small red pepper
1 small bunch parsley
Salt & black pepper
Take the bacon rashers and line individual muffin tins by placing the bacon around the side as a wrap, or you can line a loaf tin for a larger family blue plate special meatloaf.
Add the coconut oil to a non stick pan and gently soften the onions, garlic and pancetta for a couple of minutes, transfer to a large bowl along with the rest of the ingredients and squidge together, form in to a ball and press into the bacon ring. Bake in the oven for around 10-15 minutes until cooked.
Once cooked they are ready to eat, but I wanted a little more of a caramelised flavour on the bacon so in a non stick frying pan I crisped up the edges which added another level of flavour.
