Gorgeous bowl full of natures green goodness and sunshine, every mouthful gives me that great feeling of vitality as well as gorgeous vibrant zesty flavours from the zesty lime and fresh ginger, the kelp noodles are fantastic and a great easy way to eat your seaweed.
Prep Time 10 minutes / Cooking Time 6 minutes
Ingredients
(serves 2)
1 tbsp coconut oil
1 pack kelp noodles
100g kale
100g beetroot leaves
100g watercress
1/2 cup broccoli florets
1/2 cup asparagus chopped
2 spring onions sliced
2 green chillies sliced
1/4 cup green pepper diced
2 tbsp fresh grated ginger
2 cloves garlic grated
1 tbsp light soy sauce
1 tbsp fresh coriander
black pepper
This is a fast cook, prep all the ingredients first, place your serving bowls on the side and put the watercress in each bowl, heat a wok to medium hot add the coconut oil, melt, add the broccoli and asparagus, stir fry for a couple of minutes, add the ginger, garlic, chillies, pepper and spring onion, stir fry for one minute, add the kale and beetroot leaves stir in then add the kelp noodles lime juice and soy sauce, stir fry for a further minute, season to taste with the pepper and divide into your bowls, sprinkle over the coriander and enjoy.
