SUPER GREEN GORGONZOLA SOUP

This is a gorgeous super green garden soup rippled with Gorgonzola which gives each mouthful a rich creamy blue cheese gorgeousness so much so you will never believe that this is a super healthy super food soup nourishing your body full of essential antioxidants, anti inflammatory vitamins and minerals.

Prep time 5 minutes / Cooking time 10 minutes 



Ingredients 
(serves 2-3)

1 glug olive oil
1 tbsp butter
1 onion finely diced
2 cloves garlic chopped
1 head broccoli roughly chopped
500g frozen peas
1 bunch watercress
1 cup spinach
1/2 tsp turmeric
1 chilli diced
1.5ltr chicken bone broth
1/2 tsp Himalayan sea salt 
1/2 tsp black pepper
100g Gorgonzola or blue cheese

Heat a soup saucepan, add the olive oil, butter, onions and garlic and soften for five minutes, add all the rest of the ingredients except the bone broth and seasonings, cook on for a further five minutes then add the bone broth, bring to a gentle simmer for five minutes, using a stick blender blitz until smooth, if your using a blender then be careful as hot liquids like to erupt out of the blender, so start on a pulse mode and hole a tea towel over the blender lid, season with the salt and pepper, serve and crumble in the Gorgonzola so that it melts and streaks all through the soup giving each spoonful its own level of flavours each time.
