HICKORY SMOKED BBQ BASTED RIBS

 
SLOW SMOKED HICKORY BBQ BASTED RIBS
 
INGREDIENTS
4 whole baby back pork ribs
1 ltr coke a cola
water to top up if needed
100g soft brown sugar
2 tsp wrights natural liquid smoke
50g BBQ spice
 
FOR THE BBQ SAUCE
300ml tomato ketchup
100g soft brown sugar
300ml rib stock reduced
 
This is a very simple method that results in gorgeous hickory smokey BBQ ribs that a fall of the bone tender and lip smacking good, the rich stock based sweet smokey BBQ sauce just adds to the experience. 
 
First I like to take the silver skin off the back of the ribs, I do this buy lifting a corner and the thick skin should just peel off the length of the rib. Now rub the ribs with natural hickory smoke liquid and some BBQ spice.  Place the ribs stacked in a deep roasting tin and cover the ribs in coke a cola with the brown sugar and cook low on 160 degrees, and slow for approx 4hrs until they are falling of the bone tender.
 
Too make the BBQ sauce strain off 500ml of the cooking juices from the ribs and place on the stove to reduce by 200ml, then add the brown sugar and tomato ketchup, reduce until you have a nice medium thick consistency, taste and adjust if needed.  Pour over the ribs and serve.
