SWEET AND SOUR FILLET STEAK WITH BAKED GOATS CHEESE, APPLE BALSAMIC DRIZZLE AND CHILLI JAM

 
 
SWEET & SOUR FILLET STEAK
 
INGREDIENTS
 
6oz fillet steak
half a round of goats cheese
mixed leaf salad
1 beef tomato sliced
apple balsamic vinegar
salt and pepper
chilli jam (optional)
 
Pre heat a non stick pan to a high heat, rub the steak with a dash of oil, place in the pan and cook for 6 minutes for a rare and 8 minutes for medium rare, turning twice.  Meanwhile slice the goats cheese round in half and place the skin side down in the frying pan for a couple of minutes to colour the skin, remove once browned off, keeping the skin side down and place under the grill to melt the rest of the cheese, which should mainly stay in the skin.  Assemble your salad and tomato on your plate and drizzle the salad with some of the apple balsamic vinegar.
 
I am not the biggest fan of balsamic vinegar, however this apple balsamic was a fantastic find, I got it from Amazon for under a tenner and it is wonderful.
 
Take your steak off the heat and leave to rest for a couple of minutes, place your steak on top of your salad and season with salt and fresh ground black pepper, top with the goats cheese, and I like to drizzle over a generous tablespoon of chilli jam as I enjoy the sweetness with the sourness of the goats cheese and balsamic vinegar with the steak and salad.
