CREAMY VANILLA RICE PUDDING




RICE PUDDING
100g pudding rice
1100ml milk
1 vanilla pod
200g light brown caster sugar

Split the vanilla pod lenghtways and scrape out all the seeds, add the seeds and pod to the milk.  Pour the milk into a small roasting tin, add the sugar and rice and mix well. 

Place in a pre-heated oven 150 degrees for approx 50 minutes, or until the pudding is just set with a wobbly consistency and a lovely brown skin has formed.
