HOME BRAISED BAKED HONEY ROASTED HAM



 
GLAZED DARK BROWN SUGAR AND HONEY ROASTED HAM


BRAISED HORSESHOE GAMMON READY FOR BAKING AND GLAZING

1 Large horseshoe gammon
1 large pan for braising
Pepper
FOR THE GLAZE
100g dark brown sugar
100g honey
20 cloves approx
In a large roomy pan place the gammon and cover with water, add some cracked pepper, bring to a simmer and tick over or an hour or so.  Drain and place in a roasting tin.  Remove the skin from the gammon and score the top in a diagonal pattern.  Cook in a heated oven at 190 degrees for  15 minutes per lb.  30 minutes before cooking time is up take out the ham and place cloves in all the diagonal crosses and pour over some honey and press in some dark brown sugar, use more than you think you will need.  Return to the oven and roast for a further 30 minutes, take out and rest in the pan, after 30 minutes or so turn the ham over to allow the juices to run back into the meat, wrap in parchment paper and chill ready for slicing.
