CLIVE'S MOST EXCELLENT BEAUTIFUL CLAM AND MUSSEL PASTA WITH A LIGHT TOMATO AND WHITE WINE SAUCE, THIS IS JUST SUCH A FABULOUS DISH, IN FACT WE SHOULD EAT THIS EVERY WEEK!!!
Dash rapeseed oil
knob of butter
1 onion fine diced
1 garlic fine diced
1 tin quality chopped toms
Dash white wine
sea salt
fresh ground black pepper
pinch mixed herbs
fresh sprig thyme
fresh coriander
fresh parsley
suggestion of homemade tom ketchup
pinch cayenne pepper
100ml fresh fish stock
1lb fresh mussels
1lb fresh clams
Start the sauce below, after 5 minutes bring the pasta pan to the boil, salt the water and add the spaghetti, stir and leave to simmer for approx 10 minutes, meanwhile...
In a large pan melt the butter in the rapeseed oil and gently pan fry the onion and garlic, season with the salt and pepper, add 1/3 of the chopped herbs & all of the mixed herbs cook on for 5 minutes, blend the tin of tomato's and add to the pan, with the ketchup & the fish stock, add another 1/3 of the fresh chopped herbs and the cayenne pepper to taste, add the wine and bring to a simmer, add the clams and mussels and put the lid on and steam for approx 3-5 minutes until all the shells are opened.
Drain the cooked pasta and return to the pan, toss in a knob of butter or ooil, add two ladles of the tom sauce and mix gently, serve the pasta on the plate and top with lots of extra sauce and loads of clams and mussels.
