PISTACHIO PESTO
Small handful shelled pistachio's
Handful fresh basil
Single cream
Garlic
Salt & pepper
Left over roast garlic chicken
In a blender place all the ingredients except the single cream and seasoning, and blend to a paste, add the cream and mix well, season to taste. Pour into a pan, add the shredded left over garlic roast chicken and bring gently up to just a simmer, once the spaghetti is cooked drain and toss into to sauce and serve with fresh grated Parmesan and black pepper.
