ROASTED GARLIC FRITATA WITH CABBAGE FLOWER


SIMPLE FAST & FABULOUS

10 fresh eggs
1 bulb garlic sliced
Sprinkle of crushed chillies
Salt & pepper
Cabbage flower leaves
dash ooil

Heat the frying pan and gently cook the garlic until soft, brown and nutty.  Crack the eggs in a bowl, whisk, season  & add the garlic, gently mix and return to the medium hot pan, gently using a metal spoon as the fritata cooks drag the edge of the fritata to the centre whilst tipping the pan to allow the runny egg to pour back into the gap you just created, do this only until most of the runny egg stops, then place under a hot grill for a few minutes to set the top.  sprinkle with crushed chillies & cabbage flower leaves.
