THAI TOMATO & COCONUT CHICKEN SPICED SOUP

RICH TOMATO SOUP WITH CHICKEN, COCONUT MILK, SWEET & SOUR TOM YUM SPICED PASTE AND CORRIANDER

500ml home made chicken stock
10 ripe peeled and de-seeded fresh tomato's
ooil dash
1 stick of celery diced
2 spring onions chopped
Seasoning to taste, bear in mind the chicken stock is already seasoned
1/2 can of cocnut milk
Handful of left over roast chicken pieces
2 tsp tom yum paste
1 tsp turmeric
Lots of chopped corriander
Pinch of fresh chopped red chillies

Soften the celery and spring onions in the ooil, add the toms and cook down, add the chicken stock and bring to a simmer, blend, then add the coconut milk, tom yum and turmeric and chicken, simmer for a few minutes to warm the chicken and then add the corriander and fresh chillies and season to taste if it needs it.
Can add cooked noodles which would make this a more filling main meal.
