SHORTBREAD BISCUITS WITH BOILED SWEETS FOR THE CENTRE
175g butter
225g plain flour
Drop of vanilla
60g golden caster sugar
Boiled sweets
By hand rub the butter into the flour, add the vanilla and sugar and bring together to form a ball, this will be a bit crumbly around the edges, but that is the point, it needs to be short. Gently push out and roll, using Christmas cookie cutters cut out your shapes. If you want stain glass centre's for the tree lights to shine through, cut out the centre of you cookie and put a boiled sweet in, make a hole for the string with a skewer and then cook for approx 12 minutes at 180 degrees, leave to cool slightly and then lift off. Thread some string or ribbon through the hole and hang on the tree, I also ice some of the cookies.
