MAKING CHRISTMAS TURKISH DELIGHT FOR GIFTS


ROSE WATER AND LEMON WATER TRADITIONAL TURKISH DELIGHT, DUSTED WITH ICING SUGAR


HALF DIPPED TURKISH DELIGHT IN 80% DARK CHOCOLATE JUST FOR MY MUM

 TURKISH DELIGHT
4 tsp Rose Water or lemon Water
25g gelatin
225ml water
450g caster sugar
3tsp red food colour
1 tsp cornflour
Icing sugar

Mix all the ingredients together in a pan, except the gelatin, and gently warm through to dissolve the sugar.  Place the gelatin leaves in a bowl of water to soften.  Take the dissolved water off the heat, stir in the gelatin leaves. 

Grease and base line a tin pour in the Turkish Delight and leave to cool and set.  Once set turn out onto a icing sugar board and cut into squares, toss in more powdered sugar and icing sugar & coat well.  I place in small cellophane bags and tie a piece of raffeta in a bow & tag with a home made label zig zag cut from last years Christmas cards.

MINIMUM 70% DARK CHOCOLATE
Melt in a double boiler very slowly so as not to form any crystals.  Dip half the Turkish Delight in the chocolate and place on baking parchment to set.
